Tasting the Shanxi Wheat-Flour Food
Shanxi people are good at making wheat-flour foods, and they can make as many as a dozen or so different kinds of noodles. Following are some of them.
Lamian: Hand-made noodles served with soups of meat or seafood.
Daoxiaomian: Thin pieces in the shape of willow leaves sliced from a lump of dough .
They are good for either boiling of frying.
Daobomian: Noodles cut with a knife which has handles on both ends. Served with meat or vegetable sauces.
Tijian: Noodles made with chopsticks and a plate. Served with pork or vegetable dishes.
Maoerduo(Cat ears): Small pieces of dough rubbed into the shape of cat's ears. Can be boiled or fried.
Camian: Long, thin pieces shredded off a dough lump.
Jiumian: Pieces torn off by hand from a dough lump and boiled in water. Good only for the young and the strong.
